  • 1 head cauliflower cut into florets (or a pre-chopped bag)
  • 1 head broccoli cut into florets (briefly steamed or blanched)
  • 12 oz smoked beef sausage sliced into rounds
  • 2 Tbsp butter
  • 1 medium onion finely diced
  • 2 cloves garlic minced
  • 8 oz cream cheese softened
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese or a blend you like
  • Salt and freshly ground black pepper to taste

Method
 

  1. Heat oven to 350°F (175°C) and grease a 9x9-inch baking dish.
  2. Brown sausage in a skillet over medium-high heat, about 5–7 minutes. Remove and set aside.
  3. Melt butter in a saucepan over medium heat. Add onion and cook until softened, about 3–4 minutes. Stir in garlic and cook 30 seconds.
  4. Lower heat, add cream cheese, stirring until melted. Whisk in heavy cream and simmer for 3–5 minutes until thickened.
  5. Remove from heat, fold in cheddar until smooth. Season with salt and pepper.
  6. Combine broccoli, cauliflower, and sausage in a bowl. Pour cheese sauce over and toss.
  7. Transfer to baking dish and spread evenly. Bake 15–20 minutes, until bubbling and golden. Broil for 1–2 minutes for extra browning.
  8. Let rest a few minutes before serving.

Notes

For a richer flavor, use a combination of cheddar and Gruyere cheese.
