  • 1 loaf brioche bread cut into cubes
  • 6 large eggs
  • 2 cups milk
  • 1/2 cup heavy cream
  • 1/4 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • Maple syrup (for serving)
  • Powdered sugar (for serving)

Method
 

  1. Grease a 9x13 inch baking dish.
  2. Cut the brioche into bite-sized cubes and place in the baking dish.
  3. Whisk together the eggs, milk, heavy cream, sugar, vanilla extract, cinnamon, and salt.
  4. Pour the egg mixture over the brioche cubes.
  5. Cover and refrigerate overnight.
  6. Preheat oven to 350°F (175°C). Remove cover and bake for 40-45 minutes.
  7. Let it cool for a few minutes before serving.
  8. Cut into squares and serve warm with maple syrup and powdered sugar.

Notes

For a richer flavor, use day-old brioche. This allows the bread to soak up the custard even better!
