Ingredients
  

Dairy and Eggs
  • 1 1/4 cups plain yogurt
  • 2 large eggs
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon white sugar
  • cayenne to taste cayenne pepper Adjust to preferred spice level
  • 1 cup self-rising flour
  • 6 oz grated Cheddar cheese, divided
  • 2 tablespoons green onions, plus more for garnish
Pasta and Butter
  • 1 cup elbow macaroni
  • 1/4 cup melted butter, plus more for greasing
  • 1/4 cup reserved pasta water

Method
 

  1. Grease an 8-inch or 9-inch cake pan and line with parchment paper.
  2. Preheat oven to 425°F (220°C).
  3. Whisk yogurt, eggs, salt, pepper, sugar, and cayenne. Mix in flour, 5 oz Cheddar, and green onions.
  4. Cook macaroni until tender, drain, reserving 1/4 cup pasta water.
  5. Mix melted butter, macaroni, pasta water, and pour into pan. Top with remaining Cheddar and cayenne.
  6. Bake for 25 minutes until cheese is browned. Garnish with green onions and serve.

Notes

Use fresh green onions for best flavor and adjust cayenne to taste.
