Ingredients
  

Dairy
  • 113 g unsalted butter, melted
  • 200 g brown sugar, packed
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 ripe bananas mashed bananas or 3 for stronger flavor
Dry ingredients
  • 125 g all-purpose flour
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon baking soda
  • 0.5 teaspoon cinnamon (optional)
  • 0.25 teaspoon salt
Optional mix-ins
  • 0.5 cup chopped walnuts, pecans, or chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C) and prepare an 8×8-inch pan.
  2. Mix melted butter and brown sugar, then add egg and vanilla. Stir in mashed bananas.
  3. Combine dry ingredients and fold into banana mixture. Add optional mix-ins.
  4. Spread batter in pan and bake for 25–30 minutes until golden and toothpick comes out clean.
  5. Cool for 15–20 minutes before slicing into squares.

Notes

For extra flavor, use overripe bananas and add your favorite mix-ins.
