Banana Bread Chocolate Chip Cookies

Ingredients

  • 1 piece ripe banana (mashed)
  • 1/2 cup unsalted butter (softened)
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1.5 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1 cup semi-sweet chocolate chips
  • optional: 1/2 cup chopped walnuts or pecans if using

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment.
  2. Cream butter, sugars, and mashed banana until fluffy.
  3. Add egg and vanilla; mix well.
  4. Mix in dry ingredients; fold in chocolate chips (and nuts if using).
  5. Drop spoonfuls onto baking sheet; bake 10-12 mins until golden.
  6. Cool for 5 mins on sheet, then transfer to wire rack.

Notes

For softer cookies, slightly underbake and cool on the sheet.
