Ingredients
  

Meat
  • 1 lb ground beef (80% lean)
Vegetables
  • 1 medium yellow onion, diced
  • 1 cloves garlic, minced
  • 1 bell pepper chopped bell pepper (any color)
Canned Goods
  • 1 can (14.5 oz) diced tomatoes (fire-roasted optional)
  • 1 can (15 oz) kidney beans, drained and rinsed
Spices & Liquids
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 2 cups low-sodium beef broth
  • 2 tbsp olive oil

Method
 

  1. Heat olive oil in a large pot over medium heat. Sauté onions and bell peppers until softened (~5 min).
  2. Add garlic and ground beef; cook until browned (~7 min), breaking apart with a spoon.
  3. Stir in chili powder and cumin; add diced tomatoes with juices.
  4. Add beans and beef broth; bring to a simmer.
  5. Reduce heat, cover, and simmer for at least 30 minutes to meld flavors.

Notes

For extra heat, add a dash of cayenne pepper.
