Ingredients
  

Meat and Beans
  • 1 lb ground beef (15% fat)
  • 1/2 medium yellow onion (finely diced)
  • 1 tablespoon minced garlic
  • 1 15-oz. can pinto beans (drained and rinsed)
  • 1 15-oz. can kidney beans (drained and rinsed)
  • 1 15-oz. can tomato sauce
  • 1 15-oz. can diced tomatoes
  • 3 tablespoons tomato paste
  • 1 tablespoon maple syrup
  • 3 tablespoons chili powder
  • 2 teaspoons garlic powder
  • 2 teaspoons ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 1 cup beef broth (chicken broth or water works too)
Toppings
  • shredded cheddar cheese
  • Fritos
  • green onion

Method
 

  1. Heat a large stockpot over medium/high heat.
  2. Sauté ground beef, onion, and garlic for 7-10 minutes until browned.
  3. Add beans, tomato sauce, diced tomatoes, tomato paste, and maple syrup; stir well.
  4. Mix in spices and broth, bring to a boil, then simmer for 10-15 minutes.
  5. Serve topped with cheese, Fritos, and green onion.

Notes

For extra flavor, let the chili simmer longer or add your favorite toppings.
