Ingredients
  

Meat and Beans
  • 1 lb Ground Beef
  • 1 can (15 oz) Kidney Beans drained and rinsed
  • 1 can (15 oz) Black Beans drained and rinsed
  • 1 can (14.5 oz) Diced Tomatoes
  • 2 tbsp Tomato Paste
  • 1 cup Beef Broth
  • 1 tbsp Olive Oil
  • 2 tbsp Chili Powder
  • 1 tsp Ground Cumin
  • 1 tsp Smoked Paprika
  • to taste Salt and Black Pepper
Optional Garnishes
  • Shredded cheddar cheese
  • Sour cream
  • Chopped green onions
  • Fresh cilantro

Method
 

  1. Dice the onion and mince the garlic.
  2. Cook the ground beef until browned, then add onions and garlic, sauté until translucent.
  3. Add spices, tomatoes, tomato paste, and broth; stir well.
  4. Bring to a boil, then reduce heat and simmer for 25-30 minutes, stirring occasionally.
  5. Taste and adjust seasoning; serve with optional garnishes.

Notes

For extra spice, add hot sauce or chopped jalapeños during simmering.
