  • 1 loaf brioche bread, cubed
  • 8 large eggs
  • 2 cups milk
  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 2 tablespoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Pinch of salt
  • 4 tablespoons butter, melted
  • Optional toppings: maple syrup, fresh berries, powdered sugar

Method
 

  1. Grease a 9x13 inch baking dish.
  2. Spread the cubed brioche bread evenly in the baking dish.
  3. In a large bowl, whisk together the eggs, milk, heavy cream, sugar, vanilla extract, cinnamon, nutmeg, and salt.
  4. Pour the egg mixture evenly over the bread cubes, making sure all the bread is moistened. Gently press down on the bread to help it soak up the liquid.
  5. Drizzle the melted butter over the top of the bread.
  6. Cover the baking dish with plastic wrap and refrigerate for at least 2 hours, or preferably overnight.
  7. Preheat oven to 350°F (175°C).
  8. Remove the plastic wrap and bake for 45-55 minutes, or until golden brown and set. A knife inserted into the center should come out clean.
  9. Let the casserole cool slightly before serving.
  10. Serve warm with maple syrup, fresh berries, and powdered sugar, if desired.

Notes

For an extra touch, add a streusel topping before baking.
