Method
- Lightly oil a 9x13 baking pan.
- Arrange challah bread evenly in the pan.
- Beat eggs, milk, brown sugar, vanilla, cinnamon, nutmeg, cardamom, and salt in a bowl.
- Pour egg mixture over bread, covering all pieces.
- Cover and refrigerate for at least 2 hours, or overnight.
- Preheat oven to 350°F / 176°C. Ensure bread is soaked; push down if needed.
- Mix granulated sugar and cinnamon. Pour melted butter over casserole, then sprinkle with cinnamon sugar.
- Bake for 50-60 minutes, until set. Adjust rack or cover with foil if browning too quickly.
- Let sit for 5-10 minutes before serving.
- Drizzle with maple syrup or sprinkle with powdered sugar to serve.
Notes
For a richer flavor, use brioche bread instead of challah.
