  • 1 pound challah bread cubed into 1-inch pieces
  • 8 large eggs
  • 3 cups whole milk
  • 1/3 cup light brown sugar lightly packed
  • 2 teaspoons quality vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1/8 teaspoon ground cardamom
  • 1/2 teaspoon sea salt
  • 3 tablespoons unsalted butter melted
  • 3 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon

Method
 

  1. Lightly oil a 9x13 baking pan.
  2. Arrange challah bread evenly in the pan.
  3. Beat eggs, milk, brown sugar, vanilla, cinnamon, nutmeg, cardamom, and salt in a bowl.
  4. Pour egg mixture over bread, covering all pieces.
  5. Cover and refrigerate for at least 2 hours, or overnight.
  6. Preheat oven to 350°F / 176°C. Ensure bread is soaked; push down if needed.
  7. Mix granulated sugar and cinnamon. Pour melted butter over casserole, then sprinkle with cinnamon sugar.
  8. Bake for 50-60 minutes, until set. Adjust rack or cover with foil if browning too quickly.
  9. Let sit for 5-10 minutes before serving.
  10. Drizzle with maple syrup or sprinkle with powdered sugar to serve.

Notes

For a richer flavor, use brioche bread instead of challah.
