Method
- Heat oil in a skillet and fry tortilla wedges until crispy. Drain on paper towels.
- Heat enchilada sauce with green chilies in a saucepan.
- Toss fried tortillas in sauce, layer on a plate, sprinkle with cheese, and repeat. Finish with cheese on top.
- Drizzle remaining sauce over the layered chips and cheese. Microwave until cheese melts, about 1 minute.
- Optional: Garnish with sour cream, cilantro, and sliced green onions.
Notes
For extra flavor, add fresh cilantro or sliced green onions as toppings.
