Ingredients
  

Vegetable Oil
  • 1/4 cup vegetable oil
Corn Tortillas
  • 8 small corn tortillas
Enchilada Sauce
  • 1 cup mild enchilada sauce
Green Chilies
  • 2 ounces whole green chilies
Mexican Cheese Blend
  • 1 to 1-1/2 cups shredded Mexican cheese blend

Method
 

  1. Heat oil in a skillet and fry tortilla wedges until crispy. Drain on paper towels.
  2. Heat enchilada sauce with green chilies in a saucepan.
  3. Toss fried tortillas in sauce, layer on a plate, sprinkle with cheese, and repeat. Finish with cheese on top.
  4. Drizzle remaining sauce over the layered chips and cheese. Microwave until cheese melts, about 1 minute.
  5. Optional: Garnish with sour cream, cilantro, and sliced green onions.

Notes

For extra flavor, add fresh cilantro or sliced green onions as toppings.
