Ingredients

  • 4 medium bananas ripe
  • 1/2 cup melted coconut oil refined if avoiding coconut flavor
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup coconut sugar
  • 1/2 cup unsweetened almond milk
  • 1/4 cup pure maple syrup
  • 2 cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups semi-sweet chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C). Mash bananas, then mix with coconut oil, eggs, vanilla, coconut sugar, almond milk, and maple syrup until combined.
  2. Stir in dry ingredients: flour, cinnamon, baking powder, baking soda, and salt. Fold in chocolate chips.
  3. Scoop batter into prepared mold and bake for 25 minutes until a toothpick comes out clean.
  4. Cool in mold for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Use ripe bananas for best flavor and sweetness.
