Ingredients
  

Bananas
  • 1 cup ripe mashed banana around 3 medium bananas
Butter
  • cup unsalted butter melted
Eggs
  • 2 eggs
Vanilla Extract
  • 1 teaspoon vanilla extract
Cinnamon
  • ¾ teaspoon cinnamon
Flour
  • 1 ½ cups all-purpose flour
Salt
  • ½ teaspoon salt
Baking Soda
  • 1 teaspoon baking soda
Sugar
  • cup sugar
Chocolate Chips
  • 1 cup semi-sweet chocolate chips plus more for topping

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Mix melted butter, sugar, eggs, vanilla, and mashed bananas in a large bowl.
  3. Whisk together flour, salt, baking soda, and cinnamon in a separate bowl.
  4. Combine dry ingredients with wet, then fold in chocolate chips.
  5. Distribute batter into muffin tins, top with extra chocolate chips, and bake for 17-19 minutes.
  6. Cool muffins on a wire rack before serving.

Notes

Use ripe bananas for best flavor and moisture.
