Bananas
  • 3 pieces ripe bananas, mashed
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • pinch salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon ground cinnamon

Method
 

  1. Preheat oven to 350°F (175°C) and line a muffin tin.
  2. Mix mashed bananas with melted butter, then add baking soda, salt, sugar, egg, and vanilla.
  3. Stir in flour and cinnamon until just combined.
  4. Fill muffin cups about 2/3 full and bake for 18-20 minutes.
  5. Cool muffins in the tin briefly, then transfer to a wire rack to cool completely.

Notes

For extra flavor, sprinkle with additional cinnamon before baking.
