Ingredients

  • 1 lb diced chicken breast
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • Salt and pepper to taste Salt and pepper
  • 2 tbsp honey
  • ¼ cup sugar-free BBQ sauce or regular
  • 2 cups elbow pasta or any pasta of your choice
  • 1 cup fat-free evaporated milk
  • 4 oz reduced-fat cream cheese
  • 1 tsp chicken stock powder
  • 1 ½ cups shredded light cheddar cheese

Method
 

  1. Coat chicken with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Cook in a pan until golden and cooked through.
  2. Drizzle honey and BBQ sauce over the chicken, stir to combine.
  3. Cook pasta in salted boiling water until al dente, then drain.
  4. In the same pan, heat evaporated milk and cream cheese until smooth, then add chicken stock powder.
  5. Stir in shredded cheddar until melted, then fold in cooked pasta and honey BBQ chicken.
  6. Serve hot, garnished with herbs if desired.

Notes

This dish is perfect for meal prep and can be stored in the fridge for up to 3 days.
