Ingredients
  

Vegetables and Spices
  • 2 tablespoons vegetable oil
  • 2 medium onions (chopped finely) about 2 cups
  • 1 red bell pepper red bell pepper (cut into 1/2 inch cubes)
  • 6 cloves garlic (minced or pressed)
  • 0.25 cup chili powder
  • 1 tablespoon ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon red pepper flakes
  • 1 teaspoon oregano
  • 0.5 teaspoon cayenne pepper
Meat
  • 2 pounds 85% lean ground beef
Beans and Tomatoes
  • 1 can red kidney beans (15 ounces each) drained and rinsed
  • 1 can pinto beans (15 ounces each) drained and rinsed
  • 28 ounces diced tomatoes with juice
  • 28 ounces tomato puree

Method
 

  1. Cook onions, bell pepper, garlic, and spices in oil until softened, about 10 minutes.
  2. Add half the beef; cook until browned, then add remaining beef and cook until no longer pink.
  3. Transfer everything to crock pot, add beans, tomatoes, tomato puree, and salt; stir to combine.
  4. Cook on low for 8-9 hours or high for 4-5 hours.

Notes

For a spicier chili, add more red pepper flakes or cayenne.
