Cottage Cheese Banana Bread

Ingredients
  

Fruits and Dairy
  • 3 medium very ripe bananas peeled, brown and spotty
  • 3/4 cup cottage cheese use 2% fat or higher
  • 2 large eggs
Wet ingredients
  • 6 tbsp unsalted butter melted and cooled
  • 2 tsp vanilla extract
  • 1/2 cup granulated sugar
Flours and leavening
  • 1 cup whole wheat all purpose flour
  • 1 cup white all purpose flour
  • 1 tsp baking soda
  • 3/4 tsp salt
  • 1 tsp cinnamon
Add-ins
  • 1/2 cup semi-sweet or dark chocolate chips reserve 2-3 tbsp for topping

Method
 

  1. Preheat oven to 350°F (175°C) and prepare loaf pan with butter and parchment paper.
  2. Blend bananas, cottage cheese, and eggs until smooth.
  3. Mix blended mixture with melted butter, vanilla, and sugar. Combine dry ingredients separately, then fold into wet. Gently fold in chocolate chips, reserving some for topping.
  4. Pour batter into prepared pan, top with remaining chocolate chips, and bake for 45-55 minutes until golden and set.
  5. Cool completely before removing from pan and slicing.

Notes

Using ripe bananas enhances sweetness naturally, and cottage cheese adds moisture and protein.
