  • 1 tablespoon cornstarch
  • 1/4 teaspoon baking powder
  • 1/4 cup blueberries (fresh or frozen)

Method
 

  1. Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. Beat egg whites until stiff peaks form.
  3. Combine cottage cheese, cornstarch, and baking powder. Mix well.
  4. Gently fold the cottage cheese mixture into the egg whites.
  5. Gently fold in the blueberries.
  6. Spoon the mixture onto the baking sheet.
  7. Bake for 25-30 minutes, or until lightly golden brown.
  8. Let cool completely before serving.

Notes

For best results, use a clean, dry bowl when beating the egg whites.
