  • 1 cup chopped spinach
  • ½ cup diced bell pepper
  • ½ cup chopped onion
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Fresh herbs (like parsley) for garnish
  • Sliced tomatoes or avocado for serving

Method
 

  1. Preheat oven to 350°F (175°C) and grease a baking dish.
  2. Whisk eggs, then mix in cottage cheese.
  3. Add spinach, bell pepper, onion, and seasonings. Stir well.
  4. Fold in shredded cheese, reserving some for topping.
  5. Pour mixture into baking dish and spread evenly.
  6. Bake for 40–45 minutes or until center is set.
  7. Cool slightly before slicing. Garnish and serve.

Notes

For a richer flavor, use full-fat cottage cheese and add a pinch of red pepper flakes.
