Method
- Preheat oven to 350°F (175°C) and grease a baking dish.
- Whisk eggs, then mix in cottage cheese.
- Add spinach, bell pepper, onion, and seasonings. Stir well.
- Fold in shredded cheese, reserving some for topping.
- Pour mixture into baking dish and spread evenly.
- Bake for 40–45 minutes or until center is set.
- Cool slightly before slicing. Garnish and serve.
Notes
For a richer flavor, use full-fat cottage cheese and add a pinch of red pepper flakes.
