- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Add chopped vegetables and cook until softened, about 5-7 minutes.
- In a bowl, whisk together eggs, cottage cheese, salt, pepper, and any optional spices.
- Pour the egg mixture into the skillet with the cooked vegetables.
- Sprinkle shredded cheese over the top.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the egg bake is set and the cheese is melted and lightly browned.
