  • 1 loaf bread cubed (challah, brioche, or French bread work well)
  • 8 large eggs
  • 2 cups milk
  • 1 cup heavy cream
  • 0.5 cup granulated sugar
  • 2 tablespoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 1 Pinch salt
  • 4 tablespoons butter melted (for drizzling)
  • Maple syrup for serving (optional)
  • Fresh berries for serving (optional)

Method
 

  1. Grease the inside of your crockpot (at least 6-quart size).
  2. Place the cubed bread into the greased crockpot.
  3. In a large bowl, whisk together the eggs, milk, heavy cream, sugar, vanilla extract, cinnamon, nutmeg, and salt.
  4. Pour the egg mixture evenly over the bread in the crockpot. Gently press down on the bread to ensure it's soaked in the mixture.
  5. Drizzle the melted butter over the top of the bread mixture.
  6. Cover the crockpot and cook on low for 6-8 hours, or on high for 2-3 hours. Cooking times may vary depending on your crockpot.
  7. The casserole is done when the bread is set and no longer liquidy. You can test this by inserting a knife into the center; it should come out relatively clean.
  8. Let the casserole cool slightly before serving. Serve warm with maple syrup and fresh berries, if desired.

Notes

For a richer flavor, use challah or brioche bread. You can also add chocolate chips or nuts to the casserole.
