Ingredients

  • 2 large chicken breasts
Canned Goods
  • 1 can black beans (drained and rinsed)
  • 1 can corn (undrained)
  • 10 ounces Rotel tomatoes with green chilis (undrained)
Seasonings & Condiments
  • 1 packet ranch seasoning
  • 1 teaspoon ground cumin
  • 1 tablespoon chili powder
  • 1 teaspoon onion powder
  • ½ cup water
Dairy
  • 8 ounces cream cheese
Toppings
  • Cheese
  • Sour cream
  • Avocados
  • Fresh tomatoes
  • Fritos/tortilla chips

Method
 

  1. Spray crockpot with nonstick spray and add chicken breasts at the bottom.
  2. Add beans, corn, tomatoes, seasonings, and water; mix well.
  3. Place cream cheese on top without mixing.
  4. Cook on low for 6-8 hours or high for 4 hours, then shred chicken and stir.
  5. Serve topped with cheese, sour cream, avocados, tomatoes, and chips.
