  • 1 3/4 cups cups all-purpose flour spooned and leveled for accuracy
  • 1 teaspoon teaspoon baking soda for that perfect rise
  • 1/2 teaspoon teaspoon baking powder to keep it fluffy
  • 1/2 teaspoon teaspoon salt to balance the sweetness
  • 1 1/2 teaspoons teaspoons ground cinnamon for warm, cozy vibes
  • 1/2 teaspoon teaspoon ground nutmeg ‘cause fall flavors, y’know?
  • 1/4 teaspoon teaspoon ground cloves just a pinch for depth
  • 1 cup cups granulated sugar for sweetness
  • 1/2 cup cups brown sugar packed, for a caramel-y note
  • 2 large pieces eggs at room temp for better mixing
  • 1 cup cups pumpkin puree pure, not pie filling
  • 1/2 cup cups vegetable oil for moisture (I like canola)
  • 1/4 cup cups milk any kind works
  • 1/4 cup cups brown sugar packed tight
  • 1/4 cup cups all-purpose flour for structure
  • 1/2 teaspoon teaspoon ground cinnamon to tie it to the bread
  • 2 tablespoons tablespoons unsalted butter cold and cut into tiny cubes
  • 1/4 cup cups chopped pecans optional but adds crunch (I’m a nut fan)

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan, lining with parchment if desired.
  2. Whisk together dry ingredients: flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
  3. Beat sugars and eggs until smooth, then mix in pumpkin, oil, and milk.
  4. Combine wet and dry ingredients just until mixed. Prepare streusel by mixing brown sugar, flour, cinnamon, and cutting in butter; add pecans if using.
  5. Pour batter into pan, sprinkle streusel on top, and bake for 60-65 minutes until a toothpick comes out clean.

Notes

For best results, do not overmix the batter to keep the bread tender.
