Method
- Preheat oven to 350°F (175°C) and prepare baking sheet.
- Cream butter and brown sugar, then mix in bananas, egg, and vanilla.
- Whisk dry ingredients and combine with wet mixture; fold in optional add-ins.
- Drop spoonfuls onto baking sheet, spacing 2 inches apart.
- Bake for 10-12 minutes until edges are golden. Cool before serving.
Notes
For softer cookies, slightly underbake and let cool on the baking sheet.
