Ingredients
  

Dry ingredients
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
Wet ingredients
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup mashed ripe bananas
  • 1 cup shredded zucchini, excess moisture squeezed out
  • 1 cup chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. Mix dry ingredients in a bowl. Cream butter and sugar, then add eggs and vanilla.
  3. Alternate adding dry ingredients and bananas to wet mixture; mix until just combined.
  4. Fold in zucchini and chocolate chips. Pour into pan and bake for 50-60 minutes.
  5. Cool for 10 minutes, then transfer to wire rack to cool completely.

Notes

For best results, squeeze out excess moisture from zucchini before adding.
