Easy Coconut Banana Bread

Ingredients
  

Dry ingredients
  • 1 3/4 cups all purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
Wet ingredients
  • 1/2 cup vegetable oil
  • 1 cup granulated sugar
  • 2 eggs eggs (room temperature)
  • 1/2 tsp vanilla extract
  • 3 del monte fresh bananas (ripened and mashed) bananas mashed
  • 1/3 cup sour cream
Add-ins
  • 1/2 cup shredded coconut
  • 1/2 cup chopped walnuts

Method
 

  1. Preheat oven to 350°F (175°C). Line a 9x5 inch loaf pan with parchment paper.
  2. Mix dry ingredients: flour, baking powder, baking soda, salt.
  3. Whisk oil and sugar until combined, then add eggs, vanilla, bananas, and sour cream. Mix well.
  4. Stir in dry ingredients, then fold in coconut and walnuts. Pour batter into pan.
  5. Bake for 45-55 minutes until a toothpick comes out clean. Cool before slicing.

Notes

For extra flavor, sprinkle additional shredded coconut and walnuts on top before baking.
