Method
- Preheat oven to 350°F (175°C). Line a 9x5 inch loaf pan with parchment paper.
- Mix dry ingredients: flour, baking powder, baking soda, salt.
- Whisk oil and sugar until combined, then add eggs, vanilla, bananas, and sour cream. Mix well.
- Stir in dry ingredients, then fold in coconut and walnuts. Pour batter into pan.
- Bake for 45-55 minutes until a toothpick comes out clean. Cool before slicing.
Notes
For extra flavor, sprinkle additional shredded coconut and walnuts on top before baking.
