Ingredients
  

Vegetables
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 zucchini, chopped
  • 1 10-ounce package frozen chopped spinach, thawed and squeezed dry
Dairy & Seasoning
  • 1 15-ounce container cottage cheese
  • 2 large eggs, lightly beaten
  • 1/2 cup grated Parmesan cheese
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup shredded mozzarella cheese for topping Optional

Method
 

  1. Preheat oven to 375°F (190°C). Grease baking dish.
  2. Heat olive oil, cook onion until softened, then add garlic.
  3. Add bell pepper and zucchini, cook until tender.
  4. Remove from heat, stir in spinach.
  5. Combine cottage cheese, eggs, Parmesan, salt, and pepper.
  6. Add vegetable mixture to cheese mixture.
  7. Pour into baking dish.
  8. Sprinkle with mozzarella cheese (optional).
  9. Bake for 30-35 minutes, until golden brown.
  10. Let cool before serving.

Notes

Feel free to add other vegetables like mushrooms or carrots to customize this bake to your liking.
