Ingredients
  

Sweet Potatoes
  • 4 cups mashed sweet potatoes about 4 large sweet potatoes
  • 1/2 cup brown sugar
  • 1/4 cup milk
  • 1/4 cup unsalted butter melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 cup mini marshmallows optional
  • 1/2 cup chopped pecans optional

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Boil, peel, and mash sweet potatoes.
  3. Mix mashed sweet potatoes with sugar, milk, butter, eggs, vanilla, cinnamon, and nutmeg.
  4. Transfer to a greased baking dish and top with marshmallows and pecans if desired.
  5. Bake for 25-30 minutes until golden and heated through.
  6. Let cool slightly before serving.

Notes

For a richer flavor, add a dash of bourbon or maple syrup.
