  • 8 large eggs
  • 1 cup milk
  • 1 cup cheddar cheese, shredded
  • 1 cup mushrooms, sliced
  • 1 cup broccoli florets, chopped
  • 1/2 cup green onions, chopped plus extra for garnish
  • 2 cups cornbread or bread croutons, cubed for added texture
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil or butter for sautéing vegetables
  • cooked beef sausage or turkey bacon bits for added protein

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9x9 inch baking dish.
  2. Sauté mushrooms and broccoli in olive oil or butter for about 5 minutes, then cool.
  3. Whisk together eggs, milk, salt, and pepper.
  4. Add sautéed vegetables, green onions, cheddar cheese, and optional meat to the egg mixture.
  5. Fold in cubed bread or cornbread (optional).
  6. Pour the mixture into the prepared baking dish.
  7. Bake for 35-40 minutes until set and golden brown.
  8. Let cool and garnish with green onions.
  9. Slice and serve warm.
