Ingredients
  

Bananas
  • 1 ½ cups mashed bananas about 2-3 ripe bananas
  • cup vegetable oil
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 teaspoons vanilla extract
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • 1 ½ cups all-purpose flour

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Mash bananas in a bowl, then mix in oil, baking powder, baking soda, salt, cinnamon, and vanilla.
  3. Add sugars and stir until combined, then fold in flour just until no streaks remain.
  4. Pour batter into prepared loaf pan and bake for 50-60 minutes until a toothpick comes out clean.
  5. Cool for 10 minutes in the pan, then transfer to a wire rack to cool completely.

Notes

Use ripe bananas for best flavor and sweetness.
