Method
 

  1. Preheat a lightly oiled skillet or griddle over medium heat.
  2. In a bowl, combine cottage cheese, egg, flour, baking powder, and salt. Mix well until a smooth batter forms.
  3. If desired, stir in any optional seasonings or herbs.
  4. Pour 1/4 cup of batter onto the hot skillet for each flatbread.
  5. Cook for 2-3 minutes per side, or until golden brown and cooked through.
