Method
- Preheat oven to 350°F (175°C) and prepare muffin tin.
- Mash bananas until smooth, then mix in sugar and melted butter.
- Add eggs and vanilla, then stir in dry ingredients until just combined.
- Fold in nuts or chocolate chips if using, then fill muffin cups ¾ full.
- Bake for 18-22 minutes until a toothpick comes out clean. Cool before serving.
Notes
For extra flavor, add a pinch of cinnamon or mix in nuts or chocolate chips.
