French Toast Bake

A delicious baked dish combining pasta, cheese, and spinach for a comforting vegetarian meal.

Ingredients
  

Pasta and Sauce
  • 12 oz ziti pasta
  • 2 cups marinara sauce
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup chopped spinach (fresh or frozen)
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • to taste Salt and pepper
  • Olive oil for greasing Olive oil for greasing the baking dish

Method
 

  1. Preheat oven to 375°F (190°C). Cook pasta until al dente, then drain.
  2. Mix cooked pasta, marinara, ricotta, spinach, garlic powder, Italian seasoning, salt, and pepper.
  3. Grease a 9x13 inch dish with olive oil. Layer half of the pasta mixture, sprinkle with half of the mozzarella.
  4. Add remaining pasta mixture, top with remaining mozzarella and Parmesan. Cover with foil.
  5. Bake for 25 minutes, remove foil, bake 15 more minutes until golden. Cool slightly before serving.

Notes

You can add extra cheese or vegetables for variation.
