  • 1 cup gluten-free all-purpose flour with xanthan gum
  • 1 cup cottage cheese low-fat or full-fat
  • 1 large egg
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt

Method
 

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Combine flour, cottage cheese, egg, baking powder, and salt in a bowl.
  3. Mix until a smooth, sticky dough forms.
  4. Divide the dough into 4 equal portions.
  5. Shape each portion into a ball on a floured surface.
  6. Poke a hole through the center to create a bagel shape.
  7. Place bagels on the prepared baking sheet.
  8. Brush with egg and sprinkle with toppings, if desired.
  9. Bake for 20-25 minutes, or until golden brown.
  10. Cool on the baking sheet before transferring to a wire rack.
  11. Enjoy!

Notes

For a crispier bagel, try boiling them briefly before baking.
