Method
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Whisk together flour, baking powder, baking soda, and salt in a bowl.
- Combine cottage cheese, egg, and honey (if using) in a separate bowl. Mix well.
- Add wet ingredients to dry ingredients and mix until just combined.
- Divide the dough into 4 equal portions.
- Shape each portion into a bagel.
- Place the bagels on the prepared baking sheet.
- Brush with egg wash and sprinkle with everything bagel seasoning (optional).
- Bake for 20-25 minutes, or until golden brown.
- Cool on the baking sheet before transferring to a wire rack.
Notes
For a crispier bagel, broil for the last 1-2 minutes, watching carefully to prevent burning.
