Bagel Ingredients
  • 1 cup gluten-free all-purpose flour with xanthan gum
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 1 cup cottage cheese (low-fat or full-fat)
  • 1 large egg
  • 1 tablespoon honey or maple syrup (optional) optional
  • Everything bagel seasoning (optional, for topping) optional

Method
 

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Whisk together flour, baking powder, baking soda, and salt in a bowl.
  3. Combine cottage cheese, egg, and honey (if using) in a separate bowl. Mix well.
  4. Add wet ingredients to dry ingredients and mix until just combined.
  5. Divide the dough into 4 equal portions.
  6. Shape each portion into a bagel.
  7. Place the bagels on the prepared baking sheet.
  8. Brush with egg wash and sprinkle with everything bagel seasoning (optional).
  9. Bake for 20-25 minutes, or until golden brown.
  10. Cool on the baking sheet before transferring to a wire rack.

Notes

For a crispier bagel, broil for the last 1-2 minutes, watching carefully to prevent burning.
