Method
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, combine the gluten-free flour, cottage cheese, egg, and baking powder.
- Mix well until a dough forms. The dough will be sticky.
- Divide the dough into 4 equal portions.
- Shape each portion into a ball, then gently flatten it slightly.
- Use your finger to poke a hole in the center of each bagel to create the bagel shape. You can also use a small cookie cutter.
- Optional: Brush the bagels with a beaten egg white and sprinkle with everything bagel seasoning, sesame seeds, or poppy seeds.
- Bake for 20-25 minutes, or until golden brown.
- Let cool slightly before serving.
Notes
For a crispier bagel, broil for the last 1-2 minutes, watching carefully to prevent burning.
