Ingredients
  

Dairy and Eggs
  • 1 1/4 cups plain yogurt
  • 2 large eggs
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon white sugar
  • cayenne to taste cayenne pepper adjust to preference
  • 1 cup self-rising flour
  • 6 oz grated Cheddar cheese, divided
  • 2 tablespoons green onions, plus more for garnish
  • 1 cup elbow macaroni
  • 1/4 cup melted butter, plus more for greasing
  • 1/4 cup reserved pasta water

Method
 

  1. Grease an 8-inch or 9-inch cake pan and line with parchment paper.
  2. Preheat oven to 425°F (220°C).
  3. Whisk yogurt, eggs, salt, pepper, sugar, and cayenne. Add flour, 5 oz cheese, green onions, and mix.
  4. Cook macaroni until tender, drain, and reserve 1/4 cup pasta water.
  5. Mix melted butter, macaroni, and pasta water into batter. Pour into pan, top with remaining cheese and cayenne, then bake for 25 minutes.

Notes

Use freshly grated cheese for best flavor.
