Method
- Preheat oven to 350°F (175°C). Prepare a loaf pan with baking spray or butter and flour.
- Mix dry ingredients in a large bowl. In a separate bowl, combine eggs, vanilla, oil, banana, and pineapple.
- Combine wet and dry mixtures just until moistened. Fold in chopped nuts. Pour batter into pan.
- Bake for about 60 minutes, until a toothpick comes out clean. Cool in pan for 10 minutes, then remove.
Notes
For extra flavor, add a handful of shredded coconut or a dash of cinnamon.
