Hawaiian Banana Nut Bread

Ingredients
  

Dry ingredients
  • 1 1/2 cups flour
  • 1 cup granulated sugar
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
Wet ingredients
  • 2 large eggs
  • 1 tsp. vanilla extract
  • 3/4 cups vegetable oil
  • 1 cup mashed ripe banana from 2 bananas
  • 1 can (8 oz.) crushed pineapple, drained
Chopped nuts
  • 1/2 cup chopped walnuts or chopped macadamia nuts

Method
 

  1. Preheat oven to 350°F (175°C). Prepare a loaf pan with baking spray or butter and flour.
  2. Mix dry ingredients in a large bowl. In a separate bowl, combine eggs, vanilla, oil, banana, and pineapple.
  3. Combine wet and dry mixtures just until moistened. Fold in chopped nuts. Pour batter into pan.
  4. Bake for about 60 minutes, until a toothpick comes out clean. Cool in pan for 10 minutes, then remove.

Notes

For extra flavor, add a handful of shredded coconut or a dash of cinnamon.
