Method
- Preheat oven to 350°F (175°C). Line a loaf pan with parchment or grease.
- Mix dry ingredients in a bowl. In another, combine wet ingredients and stir.
- Fold in grated carrots, walnuts, and raisins. Pour batter into pan and top with more nuts and coconut flakes.
- Bake for 40-45 minutes until a toothpick comes out clean. Cool before slicing.
