Ingredients
  

dry ingredients
  • 2 cups blanched almond flour
  • 0.25-0.5 cup coconut sugar use more or less depending on sweetness
  • 1.5 teaspoons baking powder use paleo if needed
  • 1 teaspoon cinnamon
  • 1/8 teaspoon sea salt
wet ingredients
  • 2 eggs eggs
  • 1 cup ripe banana (mashed)
  • 0.5 cup coconut oil melted and cooled
  • 1 teaspoon vanilla extract
add-ins
  • 1/3 cup carrots (grated)
  • 1/4 cup walnuts (roughly chopped)
  • 1/4 cup raisins (optional)
topping
  • to taste coconut flakes for topping

Method
 

  1. Preheat oven to 350°F (175°C). Line a loaf pan with parchment or grease.
  2. Mix dry ingredients in a bowl. In another, combine wet ingredients and stir.
  3. Fold in grated carrots, walnuts, and raisins. Pour batter into pan and top with more nuts and coconut flakes.
  4. Bake for 40-45 minutes until a toothpick comes out clean. Cool before slicing.

Notes

Store loosely covered and enjoy within a few days for best freshness.
