Ingredients
  

Oil
  • 1 tablespoon olive oil
Vegetables
  • 1 medium onion, diced
  • 3 cloves garlic, minced
Meat
  • 1 pound ground turkey or lean ground beef
Canned Beans
  • 1 15 oz can black beans, drained and rinsed
  • 1 15 oz can kidney beans, drained and rinsed
  • 1 15 oz can diced tomatoes
  • 1 8 oz can tomato sauce
Broth
  • 1 cup low-sodium chicken or vegetable broth
Spices
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
Seasonings
  • to taste Salt and black pepper
Optional toppings
  • optional diced bell peppers, corn, zucchini

Method
 

  1. Heat olive oil in a large pot over medium heat. Sauté diced onion for 3–4 minutes until soft, then add minced garlic and cook for 30 seconds.
  2. Add ground turkey or beef and cook until browned. Drain excess fat if needed.
  3. Stir in beans, tomatoes, tomato sauce, broth, and spices. Bring to a simmer and cook for 20–25 minutes until thickened.
  4. Adjust seasoning as needed. Serve warm with optional toppings like avocado or cilantro.

Notes

For extra flavor, add diced bell peppers or zucchini during cooking.
