  • 13 oz sprouted whole grain bread cut into 1” cubes
  • 2 tbsp butter melted
  • 5 large eggs
  • 2 cups almond milk unsweetened
  • 1/3 cup maple syrup
  • 2 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 cup mixed berries for topping
  • 1 tbsp icing sugar for topping (optional)
  • Cooking spray (I use Misto)

Method
 

  1. Preheat oven to 425 degrees F. Spray baking dish with cooking spray.
  2. Add bread cubes to dish, pour melted butter on top.
  3. Whisk eggs, milk, syrup, vanilla, and cinnamon. Pour over bread, press to soak.
  4. Cover with foil, bake 30 minutes, remove foil, bake 10 minutes. Broil for golden top.
  5. Cool 5 minutes. Add berries, sprinkle with sugar (optional). Cut and serve.

Notes

For a richer flavor, let the bread soak in the egg mixture overnight in the refrigerator before baking.
