- Whisk together honey, lime juice, lime zest, minced garlic, olive oil, salt, and black pepper to create the marinade.
- Place chicken breasts in the marinade, ensuring they are fully coated. Marinate for at least 30 minutes in the refrigerator.
- Cook the marinated chicken in a skillet or grill over medium-high heat until golden brown and cooked through (internal temperature of 165°F/74°C).
- While chicken cooks, combine diced mango, finely chopped red onion, lime juice, and chopped fresh cilantro to prepare the mango salsa. Spoon the fresh salsa generously over the cooked chicken before serving.
Notes
For an extra kick, add a pinch of red pepper flakes to the mango salsa.
