- Brown the ground beef in a large skillet over medium-high heat, then drain excess fat.
- Combine beef, tomato juice, tomato purée, beans, onion, celery, bell pepper, and spices in a large pot.
- Simmer covered over medium-low heat for 1 to 1.5 hours, stirring occasionally.
- Optional: Transfer to slow cooker and cook on low for 3-4 hours.

For richer flavor, let the chili simmer longer to meld the spices.
