Ingredients
  

Protein and Base
  • 2 pounds fresh ground beef
  • 1 quart tomato juice
  • 29 ounces tomato purée
Beans and Vegetables
  • 1 can red kidney beans, drained
  • 1 can pinto beans, drained
  • 1 1/2 cups chopped onion (about 1 1/2 cups)
  • 1/2 cup diced celery
  • 1/4 cup diced green bell pepper
Seasonings and Spices
  • 1/4 cup chili powder
  • 1 teaspoon ground cumin
  • 1 1/2 teaspoons garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon sugar
  • 1/8 teaspoon cayenne pepper (optional)

Method
 

  1. Brown the ground beef in a large skillet over medium-high heat, then drain excess fat.
  2. Combine beef, tomato juice, tomato purée, beans, onion, celery, bell pepper, and spices in a large pot.
  3. Simmer covered over medium-low heat for 1 to 1.5 hours, stirring occasionally.
  4. Optional: Transfer to slow cooker and cook on low for 3-4 hours.

Notes

For richer flavor, let the chili simmer longer to meld the spices.
