Ingredients
  

Meat
  • 2 lbs ground beef
Vegetables
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 red red bell pepper, diced
  • 1 green green bell pepper, diced
  • 1 jalapeño jalapeño pepper, diced (remove seeds for less heat)
Canned Goods
  • 2 cans kidney beans, drained and rinsed
  • 2 cans black beans, drained and rinsed
  • 2 cans diced tomatoes with green chilies
  • 1 can tomato paste
Liquids and Spices
  • 3 cups beef broth
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon cayenne pepper (optional, for extra heat)
Other
  • 1 tablespoon olive oil
Optional toppings
  • shredded cheese, sour cream, chopped green onions, fresh cilantro for serving

Method
 

  1. Brown ground beef in a skillet; transfer to crockpot.
  2. Sauté diced onion, garlic, peppers in skillet; add to crockpot.
  3. Add beans, tomatoes, tomato paste, broth, and spices to crockpot; stir well.
  4. Cook on low for 6-8 hours or high for 3-4 hours until thickened.
  5. Adjust seasoning, serve hot with toppings.

Notes

For extra heat, add more cayenne pepper or diced jalapeños.
