Ingredients
  

Canned Goods
  • 1 can black beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 can fire-roasted diced tomatoes
Vegetables
  • 2 pieces bell peppers, diced (mix of colors)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
Liquids & Spices
  • 2 tsp chili powder
  • 1 tsp cumin
  • 2 cups low-sodium vegetable broth
  • 1 cup corn kernels (fresh or frozen)
  • 2 tbsp olive oil
Seasoning
  • to taste Salt and pepper

Method
 

  1. Finely chop onion and bell peppers; mince garlic.
  2. Heat olive oil in a large pot; sauté onions and peppers until softened (~5-7 min).
  3. Add garlic, chili powder, and cumin; cook for 1-2 min until fragrant.
  4. Add beans, tomatoes, and broth; stir and bring to a boil.
  5. Reduce heat; simmer uncovered for 30 min. Add corn 5 min before serving; season with salt and pepper.

Notes

Adjust seasoning to taste and serve hot.
