Method
- Finely chop onion and bell peppers; mince garlic.
- Heat olive oil in a large pot; sauté onions and peppers until softened (~5-7 min).
- Add garlic, chili powder, and cumin; cook for 1-2 min until fragrant.
- Add beans, tomatoes, and broth; stir and bring to a boil.
- Reduce heat; simmer uncovered for 30 min. Add corn 5 min before serving; season with salt and pepper.
