  • 1 lb ground beef
Vegetables
  • 1 diced onion diced
  • 3 cloves garlic minced
Spices & Canned Goods
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 cup beef broth

Method
 

  1. In a large pot, brown the ground beef over medium-high heat for 5-7 minutes, crumbling as it cooks.
  2. Add diced onion and minced garlic; cook for 2-3 minutes until translucent.
  3. Stir in chili powder, cumin, oregano, salt, and pepper; cook for 1 minute.
  4. Add diced tomatoes, kidney beans, and beef broth; bring to a boil, then simmer for 10 minutes.
  5. Adjust seasoning as needed and serve hot with toppings.

Notes

For extra flavor, top with shredded cheese, diced onions, sour cream, or cilantro.
