Homemade Chinese Chili Oil Recipe

Ingredients
  

Spice Mix
  • 40 grams Sichuan Chili Flakes
  • 1 tsp salt
  • 2 tsp brown sugar white sugar is fine too
  • 1-2 tbsp black rice vinegar
  • 1 tsp sweet paprika powder for color
  • 2-3 tsp white sesame seeds toasted if possible
  • 2 tsp sesame oil
  • 200 ml rapeseed oil or Chinese Caiziyou oil
  • 3 cloves garlic
  • 2 pieces star anise
  • 3 tsp Sichuan Pepper
  • 2 pieces black cardamom
  • 2 pieces bayleaf
  • 1 piece cinnamon
  • 2 nuggets fresh ginger

Method
 

  1. Toast the sesame seeds until golden and set aside.
  2. Combine all spices and aromatics in a heatproof jar or bowl.
  3. Heat the rapeseed oil until just boiling, then pour over the spice mixture.
  4. Stir in the sesame oil, rice vinegar, sugar, salt, paprika, and toasted sesame seeds.
  5. Let the chili oil cool completely before storing in a jar.

Notes

Adjust spice levels to taste and store in a sealed container for up to a month.
