French Toast
  • 1 loaf challah or brioche bread (10 cups)
  • 8 large eggs
  • 2 cups whole milk
  • 1 cup heavy cream
  • 0.5 cup granulated sugar
  • 0.25 cup brown sugar
  • 1 tbsp vanilla
  • 1 tsp cinnamon
  • 0.25 tsp nutmeg
Streusel
  • 0.5 cup all-purpose flour
  • 0.5 cup brown sugar
  • 1 tsp cinnamon
  • 1 pinch salt
  • 0.5 cup cold unsalted butter (1 stick, cubed)

Method
 

  1. Arrange bread slices in a greased 9x13-inch dish.
  2. Whisk custard ingredients and pour over bread. Refrigerate for at least 2 hours or overnight.
  3. Prepare streusel by mixing flour, brown sugar, cinnamon, and salt. Cut in butter until coarse crumbs form.
  4. Preheat oven to 175°C (350°F). Sprinkle streusel over bread.
  5. Bake uncovered for 45-55 minutes, until golden and custard is set.
  6. Let cool for 5-10 minutes before serving with toppings.

Notes

For best results, use day-old challah or brioche bread. Soaking the bread overnight allows it to fully absorb the custard.
