Ingredients
  

Meat
  • 1 lb breakfast sausage
  • 6 large eggs
  • 2 cups milk
  • 3 cups diced bread (preferably stale)
  • 2 cups shredded cheddar cheese
  • 1 cup diced bell peppers
  • 1 cup diced onion
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1 tbsp olive oil
Garnish
  • Fresh parsley for garnish (optional)

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Cook sausage with diced onion and bell peppers until browned; drain excess fat.
  3. Whisk eggs, milk, salt, pepper, garlic powder, and paprika in a bowl.
  4. Layer bread, sausage mixture, and cheese in a greased dish; pour egg mixture over.
  5. Cover with foil, bake 30 mins; remove foil, bake 15 mins until golden.
  6. Let cool slightly, garnish with parsley if desired, and serve warm.

Notes

For a healthier option, use turkey sausage and whole-grain bread.
