- Preheat oven to 350°F (175°C) and spray mini muffin tin with cooking spray.
- Mix diced apples with half of caramel sauce; set aside.
- Combine oats, flour, sugar, spices, melted butter, and salt until crumbly.
- Press oat mixture into muffin cups, add caramel apples, then top with remaining oat mixture.
- Bake for 15-20 minutes until golden. Cool slightly before serving.
